Bamboo has been family-owned since 2007 — three restaurants on Florida’s Emerald Coast, all still run by the same family.
From a 45-seat room in Crestview to the whole coast.
Bamboo was founded in October 2007 by Joe Rice and Danny Ledford, after years working in restaurants in Destin. They wanted to bring real, high-quality sushi and hibachi to the area without the high-end price tag — so they started small, with a 45-seat room in Crestview.
Word got around. Crestview expanded, Fort Walton Beach opened, and Niceville followed in 2015. Three locations later it’s still the same family running the grills — fast-paced, a little loud, and genuinely fun.

The experience
Full-service care, counter-service speed.
Order and pay at the register, grab a table tent, and sit wherever you like. Runners and bar staff take it from there — drinks, refills, anything you need. No waiting to be seated, and no waiting on a check at the end.
Made to order
Hibachi, fried rolls and appetizers are fired to order in the kitchen. There’s no table-side hibachi show — this is Hibachi Express.
Sit where you like
Sushi bar seating, a table, or takeout — your call. Niceville and Fort Walton Beach also have a drive-thru.
Separate dietary menus
A full gluten-free menu built from the ground up rather than modified, plus a dedicated vegan menu and a kids hibachi plate. Just ask at the register.
