What we make
Two kitchens, one counter.
Rolls are cut by hand at the sushi bar, while Hibachi Express handles hibachi, ramen, noodles and curry — all ordered at the register and brought to your table.
Hibachi Express
Steak, filet, salmon, scallops, shrimp and chicken off the flat top, plus ramen, udon, yaki soba and Japanese curry.

Bamboo started in October 2007 as a 45-seat room in Crestview, opened by two friends who wanted to serve real sushi and hibachi without the high-end price tag. Fort Walton Beach followed, then Niceville in 2015 — still the same family, still the same counter.
